In constant search of precision, Yves pays particular attention to the quality of its vines and refuses the "ready-to-think". His vision of viticulture is very personal: neither conventional, nor organic, nor biodynamic. His philosophy is simple: "Produce the best grapes possible".
Origin: a cuvée reflecting the terroir and tradition. A selection of old vines from the mass selection of the Serine grape variety, the original strain and the local name of Syrah planred on 100% shallow granite soils
Viticulture: Treatments limited to the maximum depending on the weather, no insecticide to preserve biodiversity, little fertilizer and only organic. Control of vigor and yields, leaf stripping, green harvesting for better ripening of the grapes. Disbudding in the spring.
Vinification: manual harvesting, parcel and traditional vinification. Use of oenological products (indigenous yeasts) as little as possible.
Ageing: 18 months in barrels. Assembly of plots before bottling.
Olfactory tasting: Nose of ripe black fruits, white pepper, a beautiful maturity of the grape with a spicy and wild touch. Delicate woody notes.
