This light kokuto sugar shochu is fermented in ceramic pots. The first fermentation is made with rice koji, and traditionally made kokuto sugar is added to the second fermentation to make this regionally-protected style. After a single pass through a pot still, Selephant is aged for at least 1 year in enamel tanks. Like all honkaku (authentic) Japanese shochu, there is no residual sugar which results in a dry finish.
