We just love this stuff.  It's not too sweet, makes a lovely cocktail or spritz. 

The Malabar Eggnog (Variation on a Baltimore Eggnog - Delicious)
½ oz. Malabar
½ oz. Hennessy VS Cognac
½ oz. Aged Rum (El Dorado 8)
1 oz. Heavy Cream
1 oz. Whole Milk
2 Bar spoons: Light Brown Sugar
1 Egg Yolk

Shake vigorously over ice and strain into a small cocktail coup. Grate Cinnamon and Nutmeg on top.

Pearl of India (Based On The Classic French Pearl)
2 oz Malabar
.5 oz Absinthe
1/4-1/2 oz Lime
Shake over ice. Strain into Nick and Nora Glass.
Garnish with mint leaf.

Mexican Maharaja
1.5 oz Malabar
1.5 oz Mezcal
.5 Lime
Shake over ice. Strain into Small Cocktail Glass.

Goan to Glasgow
1.5 oz Laphroaig
1.5 oz Malabar
Stir over ice. Strain into Small Cocktail Glass

Malagroni
2 oz Malabar
1 oz Campari
Combine ingredients over ice in a rocks glass. Stir once.

My father is from Goa, India. Goa was a sovereign Portuguese territory for 450 years (1410-1961). It is fairly progressive and has a liberal drinking culture. Goa is very well known throughout Europe for its idyllic beaches, parties, laid back vibe and drinking culture.

My uncle started a distillery there in the 1960s. It is today run by my cousins who produce a fair number of spirits. One is from a family recipe, handed down for generations. Historically, it was served to the Kings (Maharajas) of India. It is a spiced liqueur, with significant depth which includes orange, cardamom, cinnamon and clove. The taste is quite unique. It's delicious.

Through the eyes of our symbolic bird, the Malabar Trogon, find yourself transported along with Vasco and his mariners as they sailed the Spice Route to the Malabar Coast of India.
